Marcella’s Trail Cake

Here is an easy loaf cake you can bake.  It is high in protein and tastes simply delicious. 

You can wrap it in a napkin or foil and hit the trails.

Marcella’s Super Easy High Protein Trail Cake

Dry Ingredients:

  • 4 cups Whole Grain Wheat Flour Pancake Mix (Use store-bought or use recipe provided)

  • ¾ cup White Sugar or Light Brown Sugar (If you prefer, you can use less sugar)

  • 1 tsp Ground Cinnamon

  • ½ tsp Ground Nutmeg

  • Optional

  • 1 cup Chocolate Chips and/or favorite chopped Nuts Walnuts, Almonds, etc

 

Wet Ingredients:

  • ½ cup Vegetable Oil

  • 1 can (13.5 oz) Coconut Milk

  • 1 tsp Vanilla Extract

  • 2 Eggs

  • 2 ripe Bananas – mashed

 

Directions:

  1. Set oven to 350 degrees and grease two square cake pans or two loaf pans.

  2. Combine dry ingredients. Set aside.

  3. In another separate bowl, combine wet ingredients. Set aside.

  4. Fold the dry flour mixture into the wet banana milk mixture.  Do not over mix. 

  5. Pour the batter in the greased cake or loaf pans. 

  6. Bake for about 45 minutes hour to 1 hour.  Insert a toothpick and if it comes out clean, then it is done.

For making the Prepared Pancake Mix

Ingredients:

  • 5 cups Whole Grain Wheat Flour

  • 3 cups Whole Rolled Oats Flour (for the Oat Flour - whole rolled oats processed in a food processor)

  • 1 Tbsp Baking Soda

  • 3 Tbsp Baking Powder

  • ½ Tbsp Salt

  • 6 Tbsp Dry Milk Powder

  • ½ cup White Sugar or Light Brown Sugar (If you prefer, you can omit or use less sugar)

 

Directions:

Mix all the ingredients.  Store in a zipper bag or airtight container.

Sometimes I make a batch of the Prepared Pancake Mix into single serving amounts; about 1 or 2 cups in zip-lock sandwich bags.  When I go camping, I can add the water (or use canned milk) and/or yogurt in the bag, reseal the bag, mix it, then pour on a hot griddle and make pancakes.

 

For making the pancakes:

Ingredients:

  • 1 ½ cups or 2 cups Whole Grain Wheat Oatmeal Pancake Mix

  • 1 Egg

  • ¾ cup Water, Milk, or Buttermilk (or ½ cup Yogurt and ½ cup Water or Milk)

  • 1 Tbsp Sugar or Honey

  • For Waffles – add 1 Tbsp Vegetable Oil to the batter.

  • Optional:  Add ¼ cup applesauce, or 1 mashed banana and ½ tsp cinnamon and/or some chopped nuts.

Directions:

  1. Mix all ingredients in a bowl or in a container with a spout.

  2. Heat up the griddle over medium heat and add 1 or 2 teaspoons of oil or butter. 

  3. Use a ladle or pour the batter in the griddle to make two or three circle pancakes that are about 3 inches round. 

  4. Cook the pancakes until bubbles form and the edges are getting dry, about 2 minutes. Flip, and cook until lightly browned on the other side.

  5. Repeat and pour batter in the griddle to make more pancakes until all the batter us used.

Leftover pancakes can be wrapped in plastic or foil and refrigerated for about a week or frozen for about a month.

The queen palm tree with the frond with lots of berries. These berries will to drop soon and then ground will be littered with these berries.

There were so many of the Queen Palm tree berry seeds that dropped from last year and then they sprouted baby palm trees this spring! I planted some of the baby palms in small cups to plant at other areas of my property and to give some away. I love the palm trees!
